If I add/amend items to an assembly BOM in a works order, could I do this without it affecting the original assembly?

Maybe i should have also asked if it is possible to alter the BOM with in a works order ?

So what you want to do is to create a work order for a standard assembly and change the BOM within that work order, maybe add or remove components, and have that change only affect that one work order. The original assembly remains unchanged?
You can't change a BOM within a work order. You shouldn't be doing that even if it was possible.
You need to make a new revision of the assembly.
So, in the assembly editor, open the original assembly and from the 'burger' menu select the option to 'Save As' and save the assembly as a new revision. This creates a new identical assembly with different revision number and the original assembly remains unchanged. Now make your changes and save.
Now create a work order for that 'new' assembly.
Might sound a little 'round the houses' but once you've done it it's really quick and you'll always know exactly what you've shipped to your customers.
