I have a couple of thousand finished goods each with a BOM of 10 items or less. Can MiniMRP handle this?

Couple of thousand is no problem.
MiniMRP is not "Mini" because of the number of items it can handle. It can handle millions.
It's "Mini" because the user interface, the thing you look at every day, is easy to use and doesn't have a "Maxi" number of menus, buttons, options and bells and whistles that nobody uses anyway.
