Is there a function that can pull up the amount of a component that has been entered into inventory over the course a specific time period?

No. Sorry. But...
In the Item Detail window (That's the window where you can edit a component's description, category etc) you see a 'History' tab. In the History you'll see all transactions that have affected that item's quantity. You can't filter that to exclude dates outside of the period you're interested in but the history is sorted by date so you may be able to see the information you're interested in?
