Any recommendations of how to create a reverse assembly? Usually several parts are used to create one new single part number. We want to buy a full sheet of metal and cut it into smaller indivudual plates for stock. So, (1) bought 10ft x 4ft sheet could become (40) 1ft x 1ft plates into inventory. ANy suggestions to approach this in MRP?

One way to do it would be to create a BOM that makes a 1x1 plate that requires a quantity of 0.025 of that big sheet. Create a BuildForStock work order to build 40 1x1 plates and it'll consume one big sheet. and you'll have 40 1x1 on the shelf.
Another way. Assuming that sheet is always cut into 40 1x1 plates as soon as it arrives from the supplier then you could set this up in the supplier's UOM. Go to the 'All Components'. Scroll down to your 10x4 sheet. Double click it to open the item detail window. Across the midle of the detail window is the row of tabs one of which is 'Supplier'. Usually already selected by default. You can change the suppliers UOM to "SHEET" and the QtyPerUOM to 40. When you then order one sheet from the supplier you'll receive one sheet but your inventory will increase by 40 (ie saying that you have 40 sqFt. In your BOMs you just use a quantity of feet. Then just set somebody to cut then into 1x1's before putting them on the shelf.
